The rich heritage of India contributes to wide range of traditional foods. Indigenous meat products are unique in their spicy flavour, simplicity and ease of preparation. They have the potential of becoming value added convenience products of good palatability. Popular indigenous meat products are seekh kabab, shami kabab, tikka, kofta. pickles etc. Some of the variety meats are used in traditional manner. The yield, quality and acceptability of kababs have been significantly enhanced by addition of food additives like polyphosphate. Mari nation can be effectively used to improve the sensory and keeping qualities of battered meat chunks. With many processing methods and tools offered by the contemporary food technology along with scientific packaging, the quality and shelf life of traditional meat products can be raised to world-class standards.
